Recipe #25: Lemon Butter Shrimp

1 stick butter, melted
1 lemon, sliced
shrimp
Italian seasoning

Place lemon slices on a baking sheet.  (I had lined mine with foil first.)  Pour melted butter over lemon slices and place shrimp on top.  Sprinkle with Italian seasoning.

Bake in a 350 degree oven for 15 minutes.

This was very good.  Simple.  It had a strong lemon flavor, which isn't a plus for me, but the husband really liked it. 


I served it over rice, which is a huge plus for my daughter.


There was enough lemon butter left in the pan to make a little sauce for the rice.

Recipe #24: Crash Hot Potatoes

Ingredients

12 whole New Potatoes (or Other Small Round Potatoes)
3 Tablespoons Olive Oil
Kosher Salt To Taste
Black Pepper To Taste
Rosemary (or Other Herbs Of Choice) To Taste
Bring a pot of salted water to a boil. Add in as many potatoes as you wish to make and cook them until they are fork-tender.
On a sheet pan, generously drizzle olive oil. Place tender potatoes on the cookie sheet leaving plenty of room between each potato.
With a potato masher, gently press down each potato until it slightly mashes, rotate the potato masher 90 degrees and mash again. Brush the tops of each crushed potato generously with more olive oil.
Sprinkle potatoes with kosher salt, fresh ground black pepper and fresh chopped rosemary (or chives or thyme or whatever herb you have available.)
Bake in a 450 degree oven for 20-25 minutes until golden brown.

These were super yummy and fun to make.

Recipe #23: Turkey Wrap with Cucumber Cream Cheese

Ingredients

  • 1/4 cup chopped cucumber
  • 4 tablespoons softened cream cheese
  • 3 large flour tortillas
  • 1/4 pound sliced smoked turkey breast

Stir cucumber into cream cheese, spread on tortillas, layer with turkey slices and roll up.

This was unimpressive.  I added some avocado, but still overall, it was bland and boring.  When I found the address online, someone noted that they added powdered ranch seasoning.  That would definitely give it some kick, or at least some much needed flavor.

Recipe #22: Layered Enchilada Casserole

Ingredients:
2 cup cooked, shredded chicken
1 can diced tomatoes, drained (15 oz)
1 can black beans, drained (15oz)
1 tub Santé Fe Blend Philadelphia Cooking Crème
2 cup shredded cheese
3 flour tortillas

1. Mix the chicken, tomatoes, beans, and cooking crème in a bowl. Combine well.
2. Place a 1/3 cup mixture on bottom of a pie plate or 8X8  pan.  Top with 1 flour tortilla.
3. Top tortilla with chicken mixture and cheese. Repeat layers and end with chicken mixture on top and top with last bit of cheese.
4. Bake uncovered at 350 degrees 30 minutes or until heated through.

This was very good.  The kids liked it a lot.  Easy to make.  The original recipe gives directions for making it as a freezer meal, but I skipped that part and just baked it after assembly.
